More Grain Bowls!

Happy Family Weekend, Red Foxes!
To perk up your rainy Friday, I’m here with some more information about grain bowls on campus. I’ve already told you a little about how you can make grain bowls of your own in the Dining Hall. However, if you’re new to the grain bowl game, or don’t have the time to customize your own bowl, we have a couple delicious prepared options at our very own North End Dining.
These grain bowls feature a few special ingredients you can’t get at the regular salad station, including feta cheese, cilantro, and avocado. The North End presents two scrumptious grain bowls - the Golden Jewel Mediterranean Salad and the Latin Chipotle Quinoa Salad.
The Golden Jewel Mediterranean Salad features a “golden jewel blend” of red quinoa, tri-color orzo pasta, and garbanzo beans along with sun-dried tomatoes, Kalamata olives, spinach, feta cheese, and topped with a nice Balsamic vinaigrette.
The Latin Chipotle Quinoa Salad sports a slightly spicier taste. It features red quinoa as the base, topped with avocado, roasted corn, roma tomato, cilantro, scallion, and of course a chipotle lime dressing with a wonderful kick to it.
The other amazing thing about these grain bowls is that each of these mouth-watering options is under 200 calories! Also, since these vegan dishes are listed under the salads, they also count for the You Pick 3 combination. So, with just a meal swipe, you can walk out of North End Dining with a full (and filling!),  delicious, healthy meal.
Evidently, North End Dining is debuting a number of trendy and yummy dishes. So, add these grain bowl options to your list and bring your family on over to North End Dining to try something new!
